Barbara Jo Gibbs, age 61, of Hawick died unexpectedly on Wednesday, August 8th, at the Centracare Hospital in St Cloud.
A Celebration of Life open house will be held from 2-5 p.m. on Saturday, August 18th, at the Saulsbury Beach Park on Green Lake in Spicer.
Barbara was born in Kansas City, MO on February 5th, 1957, to William and Laura (Erwin) Ford. She grew up in Kansas City. Barbara moved to Minnesota in 1989 with her husband Norman Gibbs. On March 14th 1992, she was united in marriage to Norman at the Assembly of God Church in Sauk Centre. The family made their home in Hawick. Barbara worked as a CNA at the Koronis Manor in Paynesville for several years. She also worked as a cook for various restaurants in the area including her own mobile kitchen, Mr. Tacos.
She cherished the time she spent with her children and grandchildren. Some of her hobbies included cooking for family and friends, listening to music (one of her favorites was Elvis Presley), watching soap operas (General Hospital), and collecting things. She loved to drink 7up and eat Lays Stax chips.
She is survived by her husband of 30 years, Norman; seven children, Stacey (Valentine) Madera of Oakdale, Tracy Adams of Hawick, Heather (Luke) Sand of Hewitt, Angie Gibbs (fiancé, Bob Westphal) of Atwater, Jessie (Martine) Gibbs of Wadena, Kimberly (Robert) Garza of Pennock, and Mark Gibbs of Hawick, twenty-one grandchildren and one great grandson. Barbara is also survived by two brothers, Roger Ford of Troy, Kansas and David Ford of Mesa, Arizona and many nieces and nephews.
She was preceded in death by her parents; two sisters, Connie and Denise; one brother, Roy and a grandson, Mason.
